Recipe: Banana (no flour) pancakes

Here’s a simple and quick recipe to try at the weekend, perfect for post training and great to share. Although it’s hard to imagine that it works, it really does and although you might imagine that it just tastes eggy, it doesn’t – genius! Ingredients: (makes three small pancakes/1 portion) 1 banana 1 egg 1/2 tsp cinnamon (or to taste) Oil (of your choice) for cooking Topping: Honey Blueberries or other berries of your choice Method: – Mash-up the banana with a fork. – Crack an egg into the banana and mix well. – Stir in the cinnamon. – Heat a teaspoon of oil in the frying pan over a low-medium heat. – Spoon or pour 1/3rd of mixture and allow to cook underside. – Flip pancake over and to one

Pancake

Ingredients: (makes three small pancakes/1 portion)
1 banana
1 egg
1/2 tsp cinnamon (or to taste)
Oil (of your choice) for cooking

Topping:
Honey
Blueberries or other berries of your choice

Method:
– Mash-up the banana with a fork.
– Crack an egg into the banana and mix well.
– Stir in the cinnamon.
– Heat a teaspoon of oil in the frying pan over a low-medium heat.
– Spoon or pour 1/3rd of mixture and allow to cook underside.
– Flip pancake over and to one side of the pan (making room for the next one).
– Repeat until all three are cooked through.

Serve with your favourite topping, we like honey and blueberries.
